Yup… Those Buzzfeed Banana Pancakes Really ARE That Easy

Thanks to good ‘ol social media, I’m sure you’ve seen this Buzzfeed video being passed around:

And if you hadn’t seen it before, well, you saw it now. You’re welcome.

So, the other day, when Little Moo asked for pancakes I figured… What the heck? Let’s try these bad boys out.

I did this from memory.

C’mon… how hard could it be to remember THREE simple ingredients?

Well… I just plain forgot the cinnamon… 1/3 of the ingredients. IMG_8732 But I promise, they were still yummy. But I do think the cinnamon would have made it taste more “pancake-y” and less banana omelette-y.

The video starts with the mashing of the banana. Which I get. It’s much easier to to mash it without the eggs glopping up the works. However, I thought that trying to pull out potential shells from mashed banana wouldn’t be too fun. So, I opted to crack and mix the eggs first.

Then I did some banana mashing.

“I did the mash… I did the ‘nana mash… the ‘nana mash. It was a kitchen smash…”

I mashed it until the “batter” had tiny lumps. I started with a fork, but realized I could schmoosh (totally a word) it better with the back of the spoon.

Each pancake consisted of about a tablespoon of batter which was put into a lightly greased non-stick fry pan set on medium heat. You may need to play around with the amount and heat level a bit if you try this at home.

After about 2-4 minutes, I flipped ’em and let them cook another 2-4 minutes on the other side.

They cooled…

…and were promptly devoured.

The batter made about 8 silver dollar pancakes.

(As you can tell from the pics, they were not as perfectly round. I’m HUMAN, damnit!)

Whatever the shape, Little Moo didn’t seem to mind as she ate them ALL!

Next time, I’ll try ’em with the cinnamon.

    1. Yeah – these were definitely a nice “low carb” option. For the cream cheese and egg “pancakes” are there any other ingredients? Or is it more of an unfolded cream cheese omelette?

      (No judgment… these are basically just a banana omelette ;))

      1. 2oz of cream cheese, 2 eggs, small amount of vanilla and cinnamon. Put it in the magic bullet and blend. Let it sit until the bubbles are gone and then cook in a pan like a pancake or if I am lazy, put it in a bowl and cook in the microwave for 1 minute and 30 seconds, ends up more like a french toast, but with butter and sugar free syrup or cinnamon they are my go to when I want pancakes.
